Basic Beans (Slow Cooker)

If you’re going to make a batch of beans, you might as well plan to have extra for freezing or other recipes.  1 cup of dried beans generally yields 2 cups cooked.

3+ cups dried beans

1 onion, quartered

2 garlic cloves

Bay leaf

Soak the beans in enough water to cover plus two inches for at least 8 hours.

Drain the beans and transfer to a slow cooker.  Add the remaining ingredients and water to cover.

Cover and cook on high for at least 3h or low for at least 6h, depending on the type and age of the beans.
