Irish Soda Bread

Serves 8-10

4c whole wheat flour

4t baking powder

½ t salt

1t baking soda

½ t cream of tartar

½ – ¾ c sucanat

2 c buttermilk (2T apple cider vinegar then fill to 2c with nondairy milk; let sit 5 min to curdle)

½ c raisins or to taste

2T caraway seeds or to taste


Combine everything in stand mixer and using dough hook, mix for 2-3 min.  Divide into two lightly sprayed loaf pans.  Bake at 375’ for ~25-35 min.

This is a vegan adaptation of a family recipe originating from the Meaghers in Ireland.  In addition to using white flour and buttermilk, the original recipe says to use your hands to mix (no spoons) and to knead until glossy and stiff.  I prefer the ‘new world’ adaptation as it makes this recipe doable on a week night.
