Pumpkin Spice Muffins (from a box)

1 box of Spice cake mix

1 15 oz can of pumpkin

2 flax eggs (2 T ground flax seeds stirred into 6 T water, let rest for 10 min)

2 t baking soda

1/3 c water

Ignore the directions on the box of Spice cake mix.  After the flax eggs have congealed, mix all ingredients together.  The mix will be thick so add 1 T of additional water if you must, but trust that it will all work out in the end.  Fill 15 to 18 muffin cups and bake for 15 min at 350˚F.  These are amazingly light and fluffy muffins that also happen to be very low in fat.  Enjoy warm if possible.
