Broccoli Pesto Sauce

1/2 c cashew pieces

2 c broccoli florets

1 avocado

1 small or medium onion

2 cloves of garlic

juice from 1 lemon

1/4 c water

pinch of salt

Combine all ingredients in a blender and puree.  If you do not have a high speed blender (like VitaMix or BlendTec), then soak the cashews in water for at least 30 minutes or cover them with water and microwave for 30 to 60 seconds.  Drain the cashews and add to the blender with the rest of the ingredients.  Add more water to get desired consistency.  Serve with 4 to 6 servings of pasta or rice.  Top with grilled broccoli to kick up a notch!
