Gravy

This gravy contains oil and therefore is higher fat that most recipes on this blog.

Makes ~ 3 cups

1/4 c refined coconut oil

1/2 c flour (whole wheat pastry flour, chickpea flour, etc)

2 c vegetable broth

3 T Braggs liquid aminos or 6 t of tamari or low sodium soy sauce

1 can white beans, rinsed and drained

Additional broth or water

Heat the coconut oil in a saucepan over medium until warm, then add the flour.  Whisk for 3 to 5 minutes, until the flour has been incorporated and smelly nutty.  In small batches, start adding the veg broth- whisking til smooth with each batch.

Once all the veg broth has been added, remove from heat and add the Braggs.  Puree the white beans with a bit of broth, water, or gravy until very smooth.  Add the white bean puree into saucepan with gravy and stir to incorporate.  Add more broth or water if needed to thin the gravy.  Enjoy!
