1/3 c maple syrup

1/3 c sucanat (natural cane sugar) or brown sugar

1 T vanilla extract

1/2 t salt


1/4 c coconut oil

5 c oats

2 c raw sliced almonds


Optional: 2 c raisins or other add ins


Preheat oven to 325′.  In a large bowl, mix the first 4 ingredients.  Add the remainder of the ingredients and mix well.  Spread onto a large baking sheet and compress the mixture with a metal spatula.  Bake on the upper middle rack for 15 min, rotate the pan, and bake for another 10 to 15 minutes or until golden brown.  Let cool then break into pieces and store.  Note that the granola will take longer to brown if using more oil.  Just watch the granola toward the end of baking until you determine what’s best for your oven and recipe.

Notes:  Each time I make this, I decrease the amount of sugar.  If you want the granola to stay together without easily crumbling, you’ll need to use more oil (at least 1/2 c) or add a nut butter to make granola bars.  Unrefined coconut oil is less expensive but has a bit of a coconut flavor, which my family enjoys.  Refined coconut oil also works great here and doesn’t smell or taste like coconut.
