Irish Stew (Slow Cooker)

1 medium or 2 small potatoes per serving

1 full sized carrot per serving

¼ onion per serving

1/8 head of cabbage per serving

1/2 c cooked white beans per serving

Caraway seeds, thyme, and/or parsley

Salt or white miso

Water, broth, beer or a combination of liquids to almost cover stew ingredients

Combine all ingredients in the slow cooker and cook on high for roughly 4h or low for 8h or more.  Stir at least once, even if it’s only a few minutes before serving.  Adjust seasonings (note that caraway seeds bring out the umami in potatoes and cabbage) and serve with Gravy if desired.

Kale or collard greens can also be used instead of cabbage.
