Chicken-like Seitan

1 c vital wheat gluten

2.5 T whole wheat flour

1 T nutritional yeast flakes

1 t Italian herb mix (or poultry seasoning)

Pinch of onion powder, garlic powder, ground celery seed, salt

1 c water

 

Mix dry ingredients in bowl, then add water and stir to incorporate. 

Use stand mixer with dough hook attachment or knead by hand for a few minutes. 

Spray steamer basket with oil.  Shape seitan to fit into steamer and steam for 45 min. 

Allow to cool so texture firms up, then refrigerate or use as needed.
