Mashed Potato-Flowers

Serves 6-8

3 to 5 lbs yellow potatoes cut into fourths or eighths depending on size

Cauliflower – florets from 1 head or 16 oz frozen florets, at least partially defrosted

Bring a large pot of water to boil and add the potatoes.  5 minutes later, add the cauliflower.  Cook until softened, then drain, reserving ½ c or so of the liquid.  Mash the potatoes and cauliflower, adding water, unsweetened nondairy milk, or vegetable broth as needed.  Season with salt and pepper.

The cauliflower contributes a creamy texture with no impact on the taste- no one will ever guess that this dish is anything other than mashed potatoes.
